Asian Slaw w/ Cilantro Ginger Dressing

This dressing is both healing and freakin’ delish.

Ingredients, slaw:

  • 1 large purple cabbage, finely shredded

  • 1 medium yellow onion, finely sliced

  • 4-5 carrots, spear cut

Ingredients, dressing:

  • 1 1/2 cup cilantro, loosely packed

  • 1/3 cup tamari, or soy sauce

  • 1/3 cup olive oil

  • 3/4 cup rice vinegar

  • 1-2 inch chunk of ginger

  • 6 cloves garlic

Instructions:

  1. In a large bowl, mix together cabbage, carrots, and onions. Set to the side.

  2. To prepare the dressing, blend together all dressing ingredients in a blender or food processor.

  3. Slowly add dressing to slaw mixture and massage it together. You’ll want to add more dressing than you think necessary due to how absorbent the raw vegetables will be!

  4. Keep in the fridge for 5-7 days— same applies to extra dressing!
