Gluten Free Plant Based Pizza! (And it doesn't suck!!)

A chickpea flour that really gives thin-crust vibes!

Ingredients, crust:

  • 1/2 cup chickpea flour, aka garbanzo bean flour

  • 1/2 cup water

  • 1 tbsp olive oil, divided

  • pinch of sea salt

Suggested Ingredients, for topping:

  • 1/4 cup tomato sauce

  • 1/4 - 1/2 cup OatZarella cheese, or another plant based cheese, avoid canola oil*

  • sliced tomatoes

  • fresh basil

  • baby portobello mushrooms, sliced

  • plant based pesto

  • 1 tbsp red pepper flakes

  • 1 tbsp fennel seeds

Instructions:

  1. Preheat oven to 425.

  2. Whisk together flour and water. Add 1/2 tbsp olive oil and salt. Let sit for 3-4 minutes.

  3. Add remaining 1/2 tbsp olive oil to a cast iron pan or a pizza pan. Pour mixture into pan and bake on bottom rack for 8 minutes.

  4. After 8 minutes, set oven on a High Broil and cook for another 5 minutes.

  5. Remove crust and cut the oven back down to 425. Delicately flip the crust, add your toppings and place back in oven. Cook for 18-20 minutes or until cheese has melted.
