Greek-style braised green beans (+ Potatoes!)

You can’t see all that goodness in the bottom of the cast iron, but just trust me.

Ingredients:

  • 2 lbs green beans, trimmed

  • 1/3 cup olive oil

  • 1 medium yellow onion, diced

  • 6 large garlic cloves, smashed or diced

  • 1 1/2 cups tomatoes, chopped or cherry tomatoes

  • 1/4 cup tomato paste

  • 3-4 medium potatoes, cut into 1 in pieces

  • 1 cup flat leaf parsley, fresh, chopped

  • 1/4 cup dill, fresh, chopped

  • Water, measurement depends on pan

  • Salt and pepper, to taste

Instructions:

*I recommend a Dutch oven or large pot with a lid. Large cast iron works as well.

  1. Heat oil over medium heat. Add onion and garlic. Cook ‘til fragrant.

  2. Add in tomatoes and tomato paste. Stir and cook for 5 minutes.

  3. Add potatoes, stir, and continue to cook for 1 minute.

  4. Add the green beans on top of the mixture— without stirring. Add the parsley and dill. Now add just enough water to cover everything. Cover and allow to cook for 15 minutes without stirring.

  5. Add salt and pepper and drop the heat down to low and cook until potatoes are tender— about 30 minutes.

  6. Give a good stir and enjoy right away or keep in the fridge for 5-7 days. This makes a perfect amount for meal prep!
