EASY 3 Ingredient Flatbread (Socca!)

Ingredients:

  • 1 cup chickpea flour

  • 1/2 tsp salt

  • 1 cup water

  • dash of oil

  • dried herbs, optional*

Instructions:

  1. Mix flour and salt in small mixing bowl. Add 3/4 of the water. You’ll need to eyeball the consistency. For crepe-like pancake, keep adding water. For a thicker flatbread-like cake (*great for making pizza), stop at a medium-thick pancake batter consistency. Make sure to blend out as many clumps as you can with a fork.

  2. Let batter stand for 5 minutes if you have the time!

  3. Heat a lightly oiled skillet, preferably cast iron, on low-medium heat. Make sure the oil is well distributed.

  4. Pour mixture slowly, coating the entire pan. Cook for 3-4 minutes— looking for bubbles the same you would a pancake

  5. Give the pan a little jolt and when the flatbread seems like it’s loose enough, carefully flip and cook for another minute.

  6. Dress your flatbread! They will keep for about 3 days in the fridge.
