🍍 Aloha Toast

This is a great recipe to stay prepped for and use all week long. Keep the garbanzos and the fresh pineapple in the fridge!

Ingredients:

  • 2 slices gluten free bread, toasted

  • 1 avocado

  • 1/3 cup garbanzo beans, substitute 1/4 cup plain hummus

  • 1 tbsp fresh lemon juice

  • 1/2 cup fresh pineapple chunks, substitute 1/3 cup dried pineapple

  • 1/8 cup shredded coconut, or coconut flakes

  • 1 tbsp turmeric powder

  • sea salt, to taste

  • red pepper flakes, to taste

Instructions:

  1. Toast your bread and set it to the side.

  2. Place garbanzos in a bowl and mash them well with a fork, leaving them just slightly in tact.

  3. Cut the avocado open, scoop it out, and mash it in the bowl right on top of the beans. Lightly fold both together.

  4. Fold in the lemon juice, turmeric, salt and pepper flakes. Then, fold in the pineapple and coconut.

  5. Place your mash on the toast and enjoy!
