Sweet Beet Toast! (My new *fave* breakfast!)

Prep Time: 35 min bake + 5 min assembly

This is a perfect breakfast to have partially prepped and then just throw together each morning!

Ingredients:

  • 4 beets, golden or red

  • 3 tbsp olive oil

  • 4 sprigs of thyme

  • 2 slices of toast, gluten free

  • 2 tbsp herbed vegan cream cheese, Miyoko’s sensational scallion recommended

  • sea salt, to taste

  • honey, to taste

Instructions:

  1. Pre-heat oven to 425F.

  2. Slice beets a little thinner than 1/4 inch thick. If they’re too thin, they’ll be more like chips!

  3. Toss beets in a bag or in a large mixing bowl with the oil, sea salt and thyme.

  4. Line beets flat on a foiled baking sheet. Bake for 15 minutes. Flip and bake for another 15 minutes.

  5. To prepare your toast, first cut into triangles. Toast. I like to broil mine with a brush of oil in the oven. Spread cream cheese on each— about 1/2 tbsp per slice. Toss on the beats and drizzle with local honey!
