Southern Black Eyed Peas (For your New Years Day tradition!)

Prep Time: 40 mins

Ingredients:

  • 1 lb frozen black eye peas

  • 4 tbsp olive oil

  • 3/4 cup yellow bell pepper, chopped

  • 3/4 cup yellow onion. chopped

  • 3/4 cup celery, chopped

  • 1 small jalapeño, minced

  • 1 bay leaf

  • 3 cloves garlic, minced

  • 4 sprigs thyme

  • 1 tsp red pepper flakes

  • 2 tsp adobo seasoning

  • 4 cups vegetable broth

  • 1-2 cups collards greens, chopped

  • 1 pkg Beyond Meat Hot Italian Sausage

Instructions:

  1. Rinse black eye peas to thaw. Set to the side.

  2. In a large pan, heat oil. Saute bell pepper, onion, celery and jalapeño for 5 mins on med heat. Add bay leaf, garlic and thyme. Continue cooking for 3-4 more minutes.

  3. Add broth, red pepper, and seasoning. Throw in the peas and increase heat to med/high. Once you get to a boil, reduce and simmer for 20 minutes.

  4. Add collards, cover and cook for another 10 minutes. Add more broth or some water to make sure the peas and collards stay covered.

  5. In separate pan, brown the chopped Italian sausage on med heat. This will take about 6-7 minutes.

  6. Add the oil from the sausage to the peas and stir. When you’re ready to serve, you’ll throw the beans in a bowl with the broth and add the sausage on top! (If you mix the sausage in with the peas and broth, you’ll lose some of the texture and color of the Beyond Meat Italian Sausage.)
