Fudge 'n' Coconut Truffles

Prep Time: 20 minutes

Ingredients:

For truffles:

  • 10-12 pitted Medjool dates, soaked for 15 mins

  • 2/3 cup golden raisins

  • 1/4 cup large coconut flakes

  • 3 tbsp cacao nibs

  • 2 tbsp cacao powder

  • dash of sea salt

For garnish:

  • 1 tbsp cacao powder*

Instructions:

  1. Soak the pitted dates in water for 15 minutes.

  2. Add raisins, coconut flakes, cacao nibs, cacao powder and sea salt to a large bowl. Give them a stir.

  3. Remove dates from water. Pull them apart and add to bowl. Stir all ingredients together.

  4. Using hands, knead the ingredients together.

  5. Roll the mixture into 1-inch balls.

  6. Place them back in the bowl and give them a toss with cacao powder*.

Keep in refrigerator or freezer to retain freshness.
