Fudge 'n' Coconut Truffles
Prep Time: 20 minutes
Ingredients:
For truffles:
10-12 pitted Medjool dates, soaked for 15 mins
2/3 cup golden raisins
1/4 cup large coconut flakes
3 tbsp cacao nibs
2 tbsp cacao powder
dash of sea salt
For garnish:
1 tbsp cacao powder*
Instructions:
Soak the pitted dates in water for 15 minutes.
Add raisins, coconut flakes, cacao nibs, cacao powder and sea salt to a large bowl. Give them a stir.
Remove dates from water. Pull them apart and add to bowl. Stir all ingredients together.
Using hands, knead the ingredients together.
Roll the mixture into 1-inch balls.
Place them back in the bowl and give them a toss with cacao powder*.
Keep in refrigerator or freezer to retain freshness.
