Deli-Style Chickpea Salad (Mayo free! 7 ingredients!)

Plant protein packed!

Ingredients:

  • 2 cans garbanzo beans, or 3 cups

  • 1 cup celery, diced

  • 1 cup carrots, diced

  • 1/2 cup scallions, chopped

  • 2/3 cup hummus, any flavor!

  • 2 tbsp stone ground mustard

  • 1 tsp paprika

  • salt and pepper, to taste

Instructions:

  1. Place chickpeas in medium bowl and mash about ¾ of them with a fork. I used my hands.

  2. Mix in remaning ingredients.

  3. Store in the fridge for 5-7 days. Wrap in a collard, throw on a gluten free bagel, serve on the side of a salad, stuff a pepper with it!
