Deli-Style Chickpea Salad (Mayo free! 7 ingredients!)
Plant protein packed!
Ingredients:
2 cans garbanzo beans, or 3 cups
1 cup celery, diced
1 cup carrots, diced
1/2 cup scallions, chopped
2/3 cup hummus, any flavor!
2 tbsp stone ground mustard
1 tsp paprika
salt and pepper, to taste
Instructions:
Place chickpeas in medium bowl and mash about ¾ of them with a fork. I used my hands.
Mix in remaning ingredients.
Store in the fridge for 5-7 days. Wrap in a collard, throw on a gluten free bagel, serve on the side of a salad, stuff a pepper with it!
