Simple Chia Parfaits! (5 Ingredient Option!)

Prep Time: 35 minutes

Ingredients:

For pudding:

  • 1/2 cup chia seeds

  • 3/4 cup coconut milk, sub oat or almond milk

  • 1 tsp vanilla

For topping:

On left-

  • 1 banana

  • 1/4 cup coconut milk, sub oat or almond milk

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • pinch sea salt, optional*

  • 1/4 cup walnuts, chopped

  • 1 scoop vanilla plant based protein powder optional*

On right-

  • 1 banana

  • 2 tbsp lime juice, key lime if possible

  • pinch sea salt, optional*

Instructions:

  1. Mix chia seeds, milk, and vanilla in jar and let stand for 30 minutes.

  2. In a small bowl, mash banana with a fork. Fold in remaining ingredients. *On left, save walnuts for top.

  3. Scoop out mixture on top of chia pudding and refrigerate until ready to enjoy!
