Cauliflower Taco Meat

Ingredients:
1 medium head cauliflower
1 1/2 cups walnuts
1 yellow bell pepper, finely chopped
1 small yellow onion, finely chopped
1/2 small jalapeno, minced *optional
2 tbsp olive oil
2 cloves garlic, minced
2 tsp cumin
2 tsp paprika
2 tbsp chili powder
2 tbsp liquid aminos, sub in tamari or soy sauce
salt, to taste
Instructions:
Preheat oven to 375 F.
Break cauliflower down into florets. Pulse in food processor or blender until it’s slightly larger than cauliflower rice.
Add in walnuts and pulse a few more times. Add 1 tbsp of oil and pulse one more time. Transfer mixture to a mixing bowl.
In a small pan, heat 1 tbsp of oil on medium heat. Add bell pepper, onion and jalapeno*. Allow to blister up for about 4-5 minutes, stirring occasionally. Transfer to mixing bowl.
Fold mixture together, adding in the remaining ingredients.
Pour onto a greased baking sheet or shallow pan. Bake for 30 minutes — longer depending on the moisture of your cauliflower head — stirring midway.
Enjoy in bowls, make cabbage wraps or tacos, whatever!
