(Killer!) Curried Creamed Spinach

Prep Time: 25 minutes

Ingredients:

  • 3 tbsp olive oil *or coconut oil

  • 1 medium onion, diced finely

  • 3 cloves of garlic, minced

  • 3 tbsp coconut flour, sub in any kind

  • 3 tbsp curry powder

  • 2 lbs spinach

  • 1 can full fat coconut milk, 13.66 oz

  • sea salt, to taste

  • black pepper, to taste

  • red pepper flakes, to taste

Instructions:

  1. In a medium sized pot, heat oil on low setting and add onion and garlic. Cook ‘til translucent — about 5 minutes.

  2. Whisk in flour and curry powder to create a paste coating the onions and garlic.

  3. Slowly add the spinach in a handful at a time. Remember to keep the mixture moving so you don’t get any sticking on the pot. It may be helpful to toss the lid on after each handful to help wilt the spinach.

  4. Once all of the spinach is in and lightly wilted, slowly stir in the coconut milk.

  5. Add the salt, pepper and red pepper to your liking.

  6. Simmer it down until it thickens up — about 10 minutes on low.
